18. Salty Snacking Snaps



Awesome pre dinner snack and the easiest thing ever. From the Fat Radish restaurant in New York.


Sugar snaps

Olive oil

Chilli flakes (I used Aleppo)

Plenty of chopped fresh mint

Good sea salt flakes

 

Place a frying pan on a high heat and warm up a generous glug of oil.

Add the chilli flakes (a pinch or so depending on how spicy you like things!) then the snaps and fry on a high heat for about 90 seconds to blister on one side before tossing about.

Cook for about 30 more seconds, you don’t want them soft, just blistered, before scattering generously with mint and plenty of salt.

Tip into a bowl and eat immediately.

They are very moreish, we just ate a 150g bag between 2 of us and they didn’t touch the sides.

My Dad would tell me they would’ve done if my sides were closer together 🙄, so be generous. Happy Tuesday 💕
