Just a lovely nutty textured quick filling easy lunch!
150g brown rice
Handful toasted mixed seeds
Handful raisins
Handful toasted almonds, chopped
2 spring onions finely sliced
2 large handfuls chopped soft herbs
15g finely grated Parmesan
Dressing:
1 clove garlic, crushed
2tsp sumac
Juice of half a lemon
3tbsp olive oil

Cook the brown rice so it still has a little bite to it, drain thoroughly, spread onto a tray and chill in fridge.
Soak the raisins in boiling water for 10 minutes then drain. Mix all the salad ingredients together.
For the dressing soak the garlic in the lemon juice with a pinch of salt and leave to sit for 5 minutes, then add the sumac and whisk in the oil. Mix leisurely and thoroughly into the salad and adjust the seasoning.
Serve with Greek yoghurt that has been seasoned with a little lemon and salt and loosened with a splash of water. Simples.
